If you are looking for a generalized answer, the shape of the flight has to do with the speed of the dart and the way it flies. If you are looking for specifics, I suggest you research aerodynamics.

I could not find any rules on limiting how far you can stand back from the line. The only rule that applies is that you can not step over the toe line. You must stand a minimum distance away, but are not required to stand at that distance.
